Before I shifted to a low-carb, low glycemic way of eating I didn’t eat breakfast. I couldn’t tolerate eggs or milk. Felt bloated after oatmeal. Sometimes I’d grab a bagel with cream cheese and salmon, but that was very rare and always a treat!!
When I’m following my plan (eating throughout the day – about 5 to 6 times a day), I start off with a bulletproof coffee or a protein smoothie — usually also includes a half-cup of coffee. If I’m working from home, I’ll splurge and have a hot breakfast. If I’m on the run, no time to make coffee or a smoothie, then I grab some cheese & nuts and out the door I go.
Today’s post is going to focus on the recipes for the top 5 breakfasts I eat AND the 5 I wanna try!! It’s important to start the day with a bite to eat because then I’m not as hungry when my first snack arrives or when it’s time for lunch. By the time dinner arrives, I’m really satisfied and I end up eating less than I do when I’m not following this plan. Here’s what keeps me going in the morning!

BULLETPROOF COFFEE – K8’s way
- 1 to 2 egg yolks
- 1 tablespoon heavy cream
- 3 pumps of sugar free vanilla syrup
- 1 cup (240 ml) coffee
- 1 teaspoon of coconut oil
I blend/beat my egg yolks with the vanilla syrup and heavy cream. Then I slowly add the oil to the coffee, melt and stir. Then add this to the heavy cream mixture through the top of the lid. This allows me to blend as I add- creating a frothy, creamy drink. You don’t want to cook the eggs. If you have an option to use espresso instead, even better! Keep in mind that two yolks will make for a creamier mixture, but sometimes that’s too much for me. So, I tend to stick to one.
To top off the coffee, I sprinkle a little cinnamon to the top. Yum!
PROTEIN SHAKE – K8s COFFEE MOCHA
- 1 cup (240 ml) coffee
- 1 scoop protein powder (I use 310 mocha flavor)
- 1/2 cup coconut milk or almond milk
- 1/2 avocado (optional) – makes for a creamier shake/smoothie
- 3 tsp hemp hearts
- handful of ice
Combine all the ingredients and blend to your liking.
HOT & SPICY SCRAMBLED EGGS
- Pad of butter
- 1 to 2 eggs
- 1 diced jalepeno
- pinch of shredded cheddar cheese
- clove of garlic
- splash of hot sauce
- optional – add sausage
- optional – bacon on the side
Scramble your eggs with some butter. Add the rest. Serve hot. Yum!
ON THE GO: NUTS & CHEESES
I keep nuts and a variety of cheeses on hand. I’m usually on the go about 3 days a week, so this is important for me to be able to grab and go!
ON THE GO: HARD BOILED EGG WITH BEEF STICK
My husband hard boils a dozen eggs every Sunday. These serve as a snack, side dish, and breakfast on the go. I usually grab a beef stick – if we have any left (they’re usually gone quick in our house!)
